Shakshuka
Description:
Shakshuka is a vibrant and flavorful Middle Eastern dish made of poached eggs in a spicy tomato sauce, often served for breakfast or brunch. The combination of simmered tomatoes, peppers, onions, and a mix of aromatic spices creates a comforting and satisfying meal.
Ingredients:
2 tbsp olive oil
1 onion, finely chopped
1 bell pepper, chopped
3 garlic cloves, minced
1 tsp ground cumin
1 tsp paprika
1/2 tsp stew powder (discretionary, for heat)
1 can (400g) crushed tomatoes
Salt and pepper to taste
4-6 large eggs
Fresh parsley or cilantro for garnish
How to Cook:
Warm olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, cooking until they soften, about 5 minutes.
Stir in the garlic, cumin, paprika, and chili powder, cooking for 1-2 minutes until fragrant.
Add the crushed tomatoes, salt, and pepper. Allow the sauce to stew for 10-15 minutes, blending incidentally, until it thickens.
Make little wells in the sauce and break the eggs into each well. Cover and cook for 5-8 minutes, until the eggs are cooked however you would prefer.
Garnish with fresh parsley or cilantro and serve with crusty bread for dipping. Enjoy!
