Preparation Method
- Cook the pasta: Boil the penne pasta according to package directions until al dente; drain and set aside
- Prepare the chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook the chicken until it reaches an internal temperature of 165°F (74°C), about 4–5 minutes per side. Remove from the skillet and keep warm
- Make the sauce: In the same skillet, reduce heat to medium-low. Add the heavy cream and mascarpone cheese, whisking until smooth and heated through, about 4–6 minutes. Stir in the sun-dried tomatoes and chopped basil
- Combine: Add the cooked pasta to the skillet, tossing to coat in the sauce. Cook until heated through.
- Serve: Slice the cooked chicken and serve it atop the pasta. Garnish with shredded Parmesan cheese and fresh basil leaves, if desired.
