Börek
Börek is a popular savory pastry found in many countries in the Balkans, Turkey, and the Middle East. Made with thin, flaky phyllo dough, it’s often filled with a mixture of cheese, spinach, or minced meat, and baked until golden and crispy.
Ingredients:
- 1 package phyllo dough (about 12 sheets)
- 200g feta cheese, crumbled
- 100g ricotta or cottage cheese
- 1 egg (for the filling)
- 1 small onion, finely chopped (optional)
- 200g spinach, cooked and chopped (optional)
- 2 tbsp olive oil or melted butter
- Salt and pepper to taste
How to Cook:
- Prepare the filling: In a bowl, mix together crumbled feta, ricotta, egg, and any additional ingredients like spinach or sautéed onions. Season with salt and pepper.
- Assemble the börek: Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil or melted butter. Place another sheet on top and brush again. Repeat until you have 4-5 sheets layered.
- Add the filling: Spread a thin layer of the cheese mixture along one edge of the phyllo dough. Roll it up tightly like a cigar or coil it into a spiral shape. Repeat for the remaining sheets.
- Bake: Preheat the oven to 375°F (190°C). Place the rolled-up böreks onto a baking sheet, brushing them with a little more oil or butter. Bake for 25-30 minutes or until golden and crispy.
- Serve: Let the börek cool slightly before slicing and serving.
