Prekmurska Gibanica is a traditional Slovenian pastry from the Prekmurje region, known for its rich layers of filo dough, filled with a delightful mixture of cottage cheese, poppy seeds, walnuts, apples, and eggs. This indulgent dessert has a unique combination of textures and flavors, making it a beloved treat at festive occasions and family gatherings.

Ingredients:

  • 500g filo pastry
  • 500g cottage cheese
  • 100g ground poppy seeds
  • 100g ground walnuts
  • 2 apples, grated
  • 4 eggs
  • 100g sugar
  • 200ml milk
  • 100g butter, melted
  • 1 tsp vanilla extract
  • Pinch of salt

How to Cook:

  1. Preheat your oven to 180ยฐC (350ยฐF).
  2. In a bowl, mix the cottage cheese, grated apples, poppy seeds, walnuts, eggs, sugar, milk, melted butter, vanilla extract, and a pinch of salt to make the filling.
  3. Brush a baking dish with melted butter and layer a sheet of filo pastry at the bottom, brushing it with butter. Repeat this process for about 6 layers.
  4. Spread a portion of the filling over the filo dough and top with another filo sheet, continuing to layer and fill until all the filling and dough are used up.
  5. Finish with several layers of filo on top, brushing each layer with butter.
  6. Bake for 40-45 minutes, or until golden brown and crispy. Let it cool before slicing and serving. Enjoy this sweet, layered Slovenian delight!
